Our Anchovies are sustainably wild caught off the coast of Morocco. Within a day of harvest, they are prepped for curing and placed in barrels for 6-12 months between layers of sea salt. After curing, the anchovies are cleaned and hand packed in pure Mediterranean olive oil. This is a traditional process that has been used for hundreds of years.
