It acts as a binder and thickener to add structure to gluten-free
baked goods. Unlike other starches, tapioca flour retains its texture
even after it’s been frozen and thawed so it’s perfect for ice cream
and big batches of soup. Use as a 2:1 substitute for cornstarch.
